From a perfect Valentine’s Day dinner to speedy skillet meals, seafood recipes, and a delicious pasta dish that’s a family favorite.

The week of feasting continues. I hope you had some delicious foods (or will have depending on when you read this meal plan) for Super Bowl Sunday.

In thinking about all of the cheesy, delicious (maybe not so healthy foods) that we may have nibbled on over the weekend, we’re keeping that in mind for this week’s menu.

But, Wednesday is Valentine’s Day, and Lunar New Year celebrations continue throughout the week.

So, this week’s meal plan is about speed dinners with delicious flavors!

Quick and Healthy 30 Minute Dinners Menu

Monday’s dinner is a family favorite pasta with broccoli that’s easy and ready in 30 minutes or less. If you want to add cooked chicken for additional protein, that’s yummy too! Serve with a giant green salad and use your preferred pasta, whole grain, gluten-free, etc.

Tuesday’s dinner is a super easy skillet “lasagna” dish that has nothing whatsoever to do with pasta. But, it’s an easy meal with lots of flavor. Add your favorite veggies and tortillas, whether that be corn, whole grain, or a mix. Serve with all the fresh taco condiments!

Wednesday’s dinner celebrates Valentine’s Day. It’s a beautiful dish, cooked in a skillet that’s perfect for two– or a family. Easy to make and such a special treat. You may want to add roasted vegetables (potatoes, sweet potatoes, broccoli, etc) to round out this special meal.

Thursday’s dinner is a bright and healthy shellfish meal that’s simple to make in a skillet, and only takes minutes to pull together.

Friday’s dinner is all about tacos — fish tacos– that are ready in about 15 minutes. You can use your Air Fryer or simply saute in a skillet. A fun Friday meal that’s ready in no time!

The Treats this week prove we have Valentine’s Day on our minds. A quick 2-minute mug cake for 1, 2, or more — and cute cookies to make for someone special.
