As school gears up, whether in-person, online, or a hybrid of the two, schedules will soon look a bit different.
If we don’t have school-age children at home, the season still changes schedules a bit. There is a sense that the carefree days of summer are coming to a close.
Let’s make the most of these lingering summer days.
This week, we’re savoring those moments with easy dinners, some as quick as 15 minutes, or easy prep, like the Slow Cooker Buffalo Tacos.
Thursday, we’re making foil packets, a mix and match seafood dinner that everyone loves. Simply because… they get to build their own.

Monday: 15 Minute White Bean Soup with Garden Vegetables
Starting Monday with a healthy, vegetarian soup that's hearty enough for dinner and easy enough to savor a summer evening. Add protein if you'd like, a summer salad, and maybe even a slice of crusty bread.
Tuesday: Spicy Buffalo Tacos
We're making taco night easier than ever with this hands-off slow cooker taco recipe made with ground beef. Add all the fixings you love!
Wednesday: Classic Turkey Club Sandwich (made lighter!)
A classic quick dinner with easy fixings. I'm adding a green salad in addition to the veggies in the sandwiches. And if I have time, I'm baking homemade fries (scroll to the bottom of the post for the recipe).
Thursday: 15 Minute Super Easy Foil Packet Fish Dinners
We're grilling tonight -- unless the weather doesn't cooperate. In which case, we'll oven baked these easy, quick-fix fish packets. Something for everyone in this mix and match easy dinner idea!
Friday: Roasted Street Corn Pizza with Pancetta
Roasted Street Corn Pizza with Pancetta and Tomatoes is an easy game day party food or Friday night classic that's as easy as it is delicious! Substitute the pancetta for bacon if you'd like. Add a salad!
Treat: Plum Cake
This is a Plum Cake late August, early September tradition in my house. The cake is simple and super delicious.
