It’s almost summer, friends, and we’re beginning the week with Memorial Day favorites and continuing the fun with simple, healthy weeknight dinners that make you feel like summer (even if unofficially) has arrived! Plus, a festive treat for the weekend.

Almost Summer Healthy Dinners Menu

Monday’s dinner is a healthier take on classic burgers for Memorial Day, but they are equally delicious and filled with flavor. Be sure to check out our Memorial Day recipes for a fun celebration day!

Tuesday’s dinner is a light, healthy, and protein-packed dinner with Southwest flavors and summery ingredients.

Wednesday’s dinner is equally simple and filled with garden-fresh ingredients. Since it’s only almost summer, take a walk down your grocery store produce aisles and choose delicious veggies for this easy pasta dish. Choose whole-grain pasta for an even healthier dinner and a green salad on the side.

Thursday’s dinner is quick (about 15-20 minutes), summery, light, and so delicious that I keep making it for friends and family! Serve with a salad; roasted veggies would be great, too. If you want to bulk up the meal, coconut rice or steamed rice is also delicious!

Friday’s dinner is a Lebanese-inspired street food meal that can be grilled indoors or out in about 10 minutes, depending on the size. Serve with condiments like hummus, Tabbouleh, whole grain pita, sliced cucumbers and greens.

The Treat is a hallmark of summer kind of dessert. It’s a favorite, it’s easy, and can be made in 10 minutes plus chilling time.
