Favorite Summer Snacks

What do you keep stocked for quick and easy yet healthy summer snacks? I’d love to hear! If you’re looking for ideas, this is what I’m stocking my refrigerator, freezer, and pantry this summer.

August 20 Minute Dinners Menu

Monday’s dinner is a vegetarian meal that’s ready in minutes. These veggie burgers are a healthy and savory treat. Serve on a whole grain bun with a simple side salad (I’m making Smashed Cucumber Watermelon Salad) and maybe additional grilled vegetables on the side.

Tuesday’s dinner is a quick and easy 15-minute healthy summer dinner salad filled with Mexican flavors, black beans, avocados, and more. It’s dinner on a platter, but you can add crispy tortillas on the side with salsa, too (while not strictly healthy, they would be delicious)!

Wednesday’s dinner is also a quick and easy meal made in the Instant Pot or pressure cooker and with all the Greek chicken flavors we love, cooked in one pot with the rice. It doesn’t get easier than this. I’ll be adding Greek Yogurt Sauce for dipping veggies on the side.

Thursday’s dinner is a low-carb seafood dish that’s ready in 15 minutes and has all the Asian-inspired flavors we love. It’s a bowl food night, and I can’t wait! Serve with salad.

Friday’s dinner is a summer classic pasta dish featuring all the summer vegetables you can think of. I’m adding zucchini, summer squash, bell peppers (probably a jalapeno, too), vine-ripened tomatoes, and anything else that catches my eye in the garden or the market. Serve with whole grain bread if you wish and a side salad.

Treat: This week’s treat is a healthy snack I like to keep stocked in the freezer during the warm months. It’s easy to make with your favorite in-season berries.
