June 20-Minute Dinners Menu
Monday’s dinner is a favorite with readers. It’s quick, easy, and delicious. And when I say quick, I mean 15-minute quick. Pretty good for a Monday! Serve over your favorite grain, and add a salad if you wish.
Tuesday’s dinner is a bit of a twist on a Mediterranean, Greek-seasoned dish that’s served with lemon couscous. I must admit, it’s the couscous I’m thinking about on this nearly summer morning. Made in one pan, it’s a quick and easy weeknight meal. Add any of your favorite condiments or whole-grain pitas to round out the meal.
Wednesday’s dinner is a 15-minute vegetarian stir-fry perfect for the warm season. I’m adding a cucumber salad to this quick and easy dinner.
Thursday’s dinner is all about quick fixes, warm weather, and tropical flavors. It’s an easy and healthy meal with a few simple ingredients that is served with a slaw on the side.
Friday’s dinner is a chicken burger flavored with Mexican spices and perfect for a summer Friday. Choose whole grain buns and maybe sweet potato fries on the side!

Tuesday: Greek Seasoned Pork with Lemon Couscous
