If you love quick and simple dinners that are not only yummy but healthy, too, this week is for you. And the great news is… these dinner recipes are 30 minutes or less! One is a 15-minute classic that is easy to adapt to your own dietary preferences.

But first, let’s talk about Dad!

Father’s Day Menu Ideas

I couldn’t help but slip in a treat this week that isn’t specifically for Father’s Day. But for some reason, it always comes to mind during this season. Most likely, it’s because the men in my life love brownies. And the brownie recipe linked in the menu below is rather decadent!

But in case you’re doing advance planning for next weekend, here are a few ideas:

June Healthy 30 Minute Dinners Menu

Monday’s dinner is a meatless, delicious pasta dish ready in minutes. Just the kind of dinner I love on Mondays– simple, quick, and easy. You may want to add cooked chicken or other leftover meat for added protein. Make a large salad and you’re good to go!

Tuesday’s dinner is a seafood twist on Taco Tuesday. Simple and healthy with summer-perfect corn salsa. As always, add all the condiments.

Wednesday’s dinner is a classic main dish dinner salad that’s healthy and always a favorite. The dressing is incredibly delicious with this salad and you’ll be glad you made it!

Thursday’s dinner is one I’ve been drooling over for a couple of weeks. Think Portugal, seafood, and deliciousness! It’s a simple dinner that’s healthy and filled with flavors I think you’ll love. Add a salad, and dinner is ready.

Friday’s dinner is a 15-minute classic taco salad. Customize it with all your favorite taco ingredients. I’m using chicken, but you can substitute it for cooked ground meat or eliminate it altogether. And if you want to add a few crushed Doritos, I won’t tell– it’s Friday, after all!

Treat: I mentioned a rather decadent homemade brownie. It’s a fun treat and a little summery because it’s easy to take on picnics and carry around the park or backyard. Or make it for dads who love chocolate.
