St. Patrick’s Day Ideas

If you’re celebrating St. Patrick’s Day this week, you’ll notice a few items on this week’s menu that reflect the verdant hills of Ireland. While I’ve chosen a couple of dishes, you may also be interested in some of my other St. Patrick’s Day recipes. Here’s a quick list to get you started:

March Comfort Food Dinners Menu

Monday’s dinner is a delicious slow cooker Mediterranean Diet vegetarian stew perfect for that seasonal bridge we were talking about. Packed with flavor and good-for-you veggies, it’s a simple meal perfect for a Monday.

Tuesday’s dinner is a quick and easy, power dinner that’s packed with protein. Serve over cauliflower rice for a low carb option, or your favorite grain. Don’t forget a seasonal salad to round out the meal.

Wednesday’s dinner is a favorite not only at my house, but with many of our readers. Simple, Greek chicken flavors made super easy on a sheet pan. Pack in all your favorite veggies and flavors for this simple meal.

Thursday’s dinner is a seafood nod toward St. Patrick’s Day! It’s the most flavorful baked salmon recipe ever. I absolutely love this dish. I’m serving with bright green peas and boiled new potatoes.

Friday’s dinner is all about St. Patrick’s Day… and comfort food. This take on classic Shepherd’s Pie combines two of my favorite dishes with an unforgettably delicious mash topping. It makes me smile just thinking about it!

Treats: Because it’s St. Patrick’s Day, I hope you’ll make a simple Irish Soda Bread sometime during the week and the Irish Apple Cake is a traditional and delicious treat in March.
