March Mediterranean Diet Dinners: As we edge closer to spring, simple but packed-with-flavor nourishing meals are on the menu. From a spring-inspired minestrone (to keep us warm on the sometimes chilly days) to chicken, pitas, seafood… and a St. Patrick’s Day treat are in store this week!

While we’re eating traditional Mediterranean Diet-inspired dinners, next weekend is St. Patrick’s Day, and I’m already considering what I will serve. Will it be corned beef and cabbage (3 different ways to make this delicious meal), a more traditional Irish stew, or healthier options like Irish Salmon or Irish Seafood Chowder? I can’t yet decide!

Thursday’s dinner is a comfort food classic Mediterranean dinner that’s incredibly easy to make on a sheet pan. Plus, it’s fun, delicious, and healthy too!
