While we’re eating traditional Mediterranean Diet-inspired dinners, next weekend is St. Patrick’s Day, and I’m already considering what I will serve. Will it be corned beef and cabbage (3 different ways to make this delicious meal), a more traditional Irish stew, or healthier options like Irish Salmon or Irish Seafood Chowder? I can’t yet decide!

Wednesday’s dinner is like springtime on a plate—lemon chicken with asparagus on the side– ready in 30 minutes. Add a salad, and this elegant meal is perfect for a simple but delicious mid-week meal.

Thursday’s dinner is a comfort food classic Mediterranean dinner that’s incredibly easy to make on a sheet pan. Plus, it’s fun, delicious, and healthy too!

Friday’s dinner is a 15-minute seafood recipe that isn’t a recipe—and one I’ve been making for weeks. Switch up the greens according to what you see in your market, grab your lidded saute pan, and Friday’s dinner is easy, easy!
