April Healthy 30 Minute Dinners Menu
Monday’s dinner saves you time in the kitchen with a delicious vegetable forward lo mein that’s ready in about 20 minutes. It’s a good way to start the week! Feel free to add a cooked protein (like rotisserie chicken, pork, or beef) if desired. Serve with a spring salad!
Tuesday’s dinner is an easy 30-minute Mexican casserole that’s a little like tacos in an easy-to-make casserole. The recipe uses ground beef, but you can easily substitute ground chicken or turkey too. A side salad would be a great addition to this meal.
Wednesday’s dinner is April perfect with bright flavors and colors. It’s a grilled chicken recipe that you can “grill” outdoors or in using a skillet or grill pan. You can add your favorite grain (white or brown rice), quinoa, or farro are delicious options.
Thursday’s dinner is a quick and easy Mediterranean Greek skillet meal ready in 30 minutes. It contains all the flavors we love like feta, briny olives, and lemon all cooked in a delicious tomato sauce. You can serve it with whole grain orzo, rice, quinoa, or farro.
Friday’s dinner is a 30 minute chicken curry dish. I don’t know why, but I’ve been craving curry lately and just had to include it in our menu this week. It’s quick, easy, and for me, perfect for spring!
