This easy October 30-Minute Dinners Meal Plan welcomes a new month with healthy, simple weeknight dinners. Some meals are ready in as little as 20 minutes. They are delicious, wholesome, and perfect for the busy days of fall!

Easy October 30 Minute Dinners Menu

Monday is a simple, healthy, fall-inspired meal with warm curry flavors, butternut squash, and easy ramen. It’s healthy comfort food for dinner as we say goodbye to September! Serve with greens on the side.

Tuesday’s dinner is a quick and easy 20 to 30-minute meal with Thai flavors and easy ingredients. Serve over your favorite grain or whole grain, like brown rice. Serve with roasted, steamed, or sauteed vegetables. I’m serving broccoli or sauteed greens tonight (or maybe both!).

Wednesday’s dinner is a lightened version of a classic skillet dish with bright Cajun flavors, chicken strips, and veggies. Serve with salad greens.

Thursday’s dinner is a 15 to 20-minute meal featuring any white fish you prefer. The recipe works equally well with salmon. This Mediterranean-inspired dish is light, healthy, and delicious!

Friday’s dinner is a healthier version of your favorite burger. Chicken burgers are quickly becoming a favorite for me! Especially when topped with my favorite condiments, like guacamole and salsa. Serve with whole grain buns (or lettuce wraps) and maybe a batch of sweet potato fries! And… happy Friday, a bit early!
