Healthy Budget Dinner Recipes: This week’s dinners are easy, healthy, and delicious. They also happen to be budget-friendly family favorite dinners!
From a modern twist on tuna casserole to enchiladas, chili, pork chops to a delicious Moroccan stew.
Here’s what we’ve planned for the dinner menu.
Healthy Budget Dinner Recipes
We’re warming up Monday’s dinner for the end of November with delicious and healthy but budget-friendly chili. Add skillet cornbread to round out the meal.
Tuesday’s dinner is a Moroccan-inspired stew with chicken, delicious spices, and cauliflower. It’s healthy and inexpensive. Leftovers for lunch throughout the week will be delicious!
On Wednesday we’re making an always popular skillet pork chop with favorite winter spices. I’m adding a green salad with boiled eggs for extra protein.
Thursday’s dinner is a classic remake of everyone’s favorite tuna casserole. Added vegetables give this easy, budget-friendly meal a nice twist.
Friday’s dinner is always a favorite at my house. I’m using frozen leftover turkey from Thanksgiving and will be swapping it for the leftover chicken. Add Spanish Rice and a side salad.

Monday: Sweet Potato & Black Bean Chili
"Make a double batch of this quick vegetarian chili, full of black beans and sweet potatoes, and eat it for lunch the next day or freeze the extras for another night. We love the smoky heat from the ground chipotle, but omit it if you prefer a mild chili. Serve with tortilla chips or cornbread and coleslaw."
Tuesday: Moroccan Chicken and Cauliflower Stew
"The chicken, chickpea, and veggie stew can be made on the stovetop in a Dutch oven, or you can hit fast-forward with a or go low and slow with a slow cooker. Using any of these ways, you’ll be treated to a healthy meal on a budget that’s low in calories, high in protein, and nicely spiced with cumin, ginger, cinnamon, and cayenne."
Thursday: Modern Tuna Casserole
Our childhood tuna noodle casserole gets a makeover in this simple, budget-friendly dinner that is packed with vegetables. Serve with a side salad.
Friday: Easiest Chicken Enchiladas Ever with Leftover Chicken
A super easy and delicious enchiladas with leftover turkey or chicken. Make it ahead and bake it when ready. Serve with side sala.
Treat: Classic Scottish Shortbread
Mildly sweet, melt-in-your-mouth flaky, easy to make, improves as it ages -- a welcome accompaniment to any cookie tray, but for me, it's absolutely perfect with a cup of tea.
