July 20 Minute Dinners Menu

This week’s meal plan features quick and easy dinners, so you can spend more time enjoying the sun!

  • For Monday, we’re making a quick vegetarian noodle dish that feels like summer! With warm international flavors, it’s a favorite for simple meals. Serve with an easy salad, and if you want to add protein, lean chicken or shrimp would be a great addition.
  • On Tuesday, it’s all about easy Southwest flavors and healthy grains in a delicious bowl-inspired meal. Instructions for Instant Pot (15 minutes), stovetop, and crockpot. Serve with your favorite Mexican toppings.
  • Wednesday’s dinner is a summer recipe that isn’t really a recipe. It’s quick, versatile, and filled with July-perfect veggies (of your choosing!). Serve with salad and crusty whole-grain bread, if desired.
  • Thursday’s meal is a beautiful, summer-inspired healthy seafood dish featuring a crispy exterior and soft flakes of white fish. Serve with quick sautéed veggies or greens.
  • For Friday, we’re returning to Southwest flavors in a dinner salad that’s ready in minutes. After all, Fridays should be about fun food and delicious flavors!
