Thank you, Barbara, for your kind words-- I'm so happy you are enjoying the recipes! And yes, the Orange Loaf Cake can be converted into cupcakes, and should make about 12 cupcakes. Bake as directed by reduce baking time to about 18-22 minutes, or until a toothpick inserted in the center comes out mostly clean or with a few crumbs attached. I like to begin checking at about 15-18 minutes. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool.
