Welcome to Summer Dinners Meal Plan | Week of June 22

Welcome to summer dinners! This week's meal plan is filled with easy, colorful meals that feel just right for the first full week of summer - fresh salads, quick skillet dinners, a plant-forward burger night, and a sweet strawberry treat to finish the week.

As the days grow longer and warmer, I love keeping dinners simple, flexible, and full of seasonal flavor. This menu leans into lighter meals with plenty of protein, vegetables, and easy prep-ahead ideas so weeknights feel a little more relaxed.

Enjoy June 30 minute dinners like a veggie burger with lettuce, cheese, and onion; a salad with gnocchi, tomatoes, and greens; and a bowl of mixed salad with feta and vegetables on a white table.

  • Monday: Black Bean Burgers

  • Tuesday: Creamy Tuscan Chicken Skillet
This quick skillet dinner is cozy yet fresh, with spinach and tomatoes. Serve it with rice, pasta, or crusty bread to catch the creamy sauce, and add a crisp green salad if you'd like something lighter alongside.
  • Wednesday: Crispy Gnocchi Caprese Salad
A summery salad-style dinner with crispy gnocchi, tomatoes, basil, and mozzarella. To make it more filling, add grilled chicken, shrimp, chickpeas, or white beans for extra protein.
  • Thursday: Mediterranean Salmon Couscous Salad
A bright, satisfying dinner with salmon, couscous, and Mediterranean flavors. Serve chilled or at room temperature, making it a great option for warm summer evenings.
  • Friday: Thai Ginger Beef
A flavorful, quick-cooking dinner to end the week. Serve over rice or noodles with steamed broccoli, snap peas, or a simple cucumber salad on the side.
  • Treat: Healthy Strawberry Fool
A light, creamy, fruit-filled dessert that's perfect for June strawberries. It's simple, pretty, and just right for a summer weeknight treat.

Have a beautiful & delicious week!

Meal Prep Tips

A little prep at the beginning of the week can make these summer dinners even easier.

  • Prep burger toppings like lettuce, tomato, onion, and avocado so Monday's dinner comes together quickly.
  • Cook a grain such as rice or couscous to use with the Tuscan chicken, salmon salad, or Thai ginger beef.
  • Wash and chop salad greens and vegetables for quick sides throughout the week.
  • Plan a protein for the gnocchi salad if serving it as a main dish. Grilled chicken, shrimp, chickpeas, or white beans are all easy choices.
  • Make the strawberry fool ahead and chill until ready to serve.
