As I write this week’s menu, I have a cup of tea that’s a bit too warm to drink at the moment and is positioned perilously close to the keyboard. But the room is chilly this morning, fog lingering outside, and all I can think about is sweaters, warm drinks, cozy food… and the beauty of an autumn morning.

Which is obviously inspiring this week’s menu. Often, we have a theme (one pot dinners, sheet pan dinners, always thinking about the Mediterranean diet) and other similar ideas. This week’s dinner ideas theme might just be easing into fall as we enter its first full week. So, let’s cozy up to the season, reach for our favorite warm drinks, and think about meals this week.

After a sip of my now-perfect Irish Breakfast tea, let’s take a look at this week’s menu!

Welcoming Fall Healthy Dinners Menu

Monday’s dinner is a delicious, hearty fall-flavored, family-friendly combination of two classics that make you know that autumn has arrived! Add a large green salad to round out the meal.

Tuesday’s dinner is all about a new twist on enchiladas. Quick and easy, this healthy meal is packed with flavor and is low carb with an easy wrap substitution. Don’t forget the greens!

Wednesday’s dinner is, for me, a fall favorite. It’s all about curry and chicken and cozy warm food. Although I must admit, curry is a favorite every month of the year—a quick way to enjoy delicious curry even on a weeknight.

Thursday’s dinner is a delicious favorite seafood taco that’s bright, delicious, and healthy too. Add all your favorite taco condiments!

Friday’s dinner is a drool-worthy classic made healthy, utterly cozy, delicious, and rather perfect for an autumn Friday.

The Treat reminds you of apple pie, yet it’s a healthy, naturally sweetened treat ready in minutes!
