January 20 Minute Dinners Menu
Monday’s dinner is a healthy breakfast for dinner meal easily made in 20 minutes. Filled with good-for-you fiber. Serve with whole grain toast for a simple Monday weeknight meal.
Tuesday’s dinner is a one-pot healthy chili dish. While the recipe calls for lean ground beef, feel free to substitute your favorite ground meat, like chicken or turkey. Or, skip the meat and bake a batch of vegetarian chili — leftovers make great lunches throughout the week. I can’t make chili without homemade skillet cornbread. Serve with a green salad.
Wednesday’s dinner is a 20 minute Greek Chicken and Rice dish made in the Instant Pot. If you don’t have a pressure cooker, scroll to the “notes” section in the recipe card for stove top instructions. This is a one pot meal with vegetables, but a nice salad on the side is always a great idea!
Thursday’s dinner is a quick and easy sheet pan dinner featuring shrimp for our seafood Thursday. Cleanup will be a breeze tonight!
Friday’s dinner is a healthier burger. Grill on a grill pan indoors if you’re in a chili climate (like I am), and consider serving with sweet potato fries!
The Treat is a winter-perfect cookie!
