November is a busy month! Let’s keep dinnertime simple with healthy, nourishing, wholesome 30 Minute dinners. And, let’s keep the ingredient list simple. It’s feast month and the beginning of the holiday season (kind of). Dinners should be easy!

As we enter a new month, and even a new season, although technically, it’s still fall, schedules seem to fill. And weeknight dinners can be shuffled to the “back burner.”
So we’re keeping dinners easy and November perfect. All are 30 minutes (give a take a few minutes) from start to finish. Filled with good-for-you-ingredients, they are weeknights you can serve and feel good about.

Wholesome 30-Minute Dinners Menu
Monday’s dinner is a full-flavored hearty soup that’s packed with flavor and healthy lentils. Serve with an ample green salad and maybe whole grain pita if that sounds good!
Tuesday’s dinner is a classic meal my mother always served for Halloween. Chili, cornbread, and salad, supposedly to fill us kids up so we wouldn’t over-indulge in candy. Um… you can guess how that ended up. But, the tradition continues! This year, we’re serving a hearty chili with fall flavors, Cast Iron Skillet Cornbread, and green salad. The treat this week might be perfect to make ahead for Tuesday.
Wednesday’s dinner is a super easy chicken stir-fry with a handful of ingredients that’s also ready in 30 minutes or less. Serve over your favorite grain.
Thursday’s dinner is a quick and easy seafood pasta that is as pretty as it is delicious! Serve with a variety of greens for a healthy and delicious dinner.
Friday’s dinner is party food. Simple and easy party food. All made in one skillet in a few minutes. Think healthy condiments and taco shells or tortillas. I’m smiling already!
The Treat is as mentioned… cute, funky, but also very yummy!

One Pot Pumpkin Turkey Chili is packed with chili flavor, is warm and hardy, and filled with wholesome ingredients. Plus, it's ready in 30 minutes! Add your favorite condiments like chopped avocado, herbs, and shredded cheese (maybe a dollop of Greek yogurt??).
Wednesday: Easy Chicken and Zucchini Stir Fry
