When I'm packing lunches, I like to think in simple building blocks rather than complicated meal prep. Choose one or two from each category, depending on the day:

  • Protein: chicken, tuna, turkey, eggs, beans, hummus, yogurt, cheese, or cottage cheese
  • Fruit or vegetables: berries, grapes, apple slices, carrots, cucumbers, bell peppers, cherry tomatoes, or a small salad
  • Whole grain or starch: whole grain bread, pita, crackers, rice, pasta salad, quinoa, or farro
  • Something flavorful: dressing, dip, salsa, pesto, mustard, or a favorite sauce
  • Something fun: a small treat, muffin, cookie bar, or homemade snack

This simple mix keeps lunches flexible and makes it easier to use what you already have in the refrigerator.

Tips for Making Quick and Easy Lunches

Quick and easy shortcuts to help make lunches during the week:

  • Prep vegetables ahead: Cut and peel carrots and celery sticks, chop cabbage for quick slaws, and use pre-cut and washed vegetables when possible.
  • Rotisserie chicken: One of my favorite shortcut tips. Shred rotisserie chicken to use for salads, sandwiches, and more. If you have extra, freeze for quick soups and stews too.
  • Store-bought dressings: They add flavor and bring lunches together quickly.
  • Make-ahead: Make as much in advance as possible. Pasta and quinoa salads are delicious for lunch.
